We chose to focus on the Morisca and Carrasqueña varieties because they embody the purest essence of our land. These are demanding varieties that reward us with exceptional quality in return for constant care. The result is an oil that does not seek to please everyone, but rather to delight those who seek the true identity of olive oil.
